One of the greatest things about writing Amish mysteries like Murder, Handcrafted is taste-testing all the Amish food, especially the desserts, so I can accurately describe in my novels. However since I’m a vegetarian and have been one since I was a teenager, there not much in the Amish daily diet that I can eat. They are very much and meat and potatoes food culture. Even so, I found a few recipes that I can enjoy, and one those is Amish macaroni salad.
Here’s the recipe for you just in time for all your summer gatherings! Enjoy!
2 cups uncooked elbow macaroni
3 hardboiled eggs, chopped
2 cups Miracle Whip
3 tablespoons yellow mustard
2 1/4 teaspoons white vinegar
1/4 teaspoon salt
3/4 teaspoon celery seed
1 onion, chopped
4 stalks celery, chopped
1 small bell pepper, seeded and chopped
5 sweet pickles, chopped
- Boil, drain, and cool macaroni.
- In a large bowl, stir together all other ingredients and then add cooked macaroni. Cover and chill before serving
